Tomato & Black Bean Salad with Cumin Dressing

A delicious summer salad, high in fibre and flavour Serves 4 Ingredients 350g cherry tomatoes 1/2 a small red onion, halved and finely sliced 400g tin black beans, drained lettuce 2 tsp cumin seeds (or ground cumin for speed) a good pinch of salt 1/2 a garlic clove 1 tsp sugar or sugar alternative juice of 1 lemon 4 tbsp olive oil basil or mint leaves, roughly chopped Method Make the dressing. Roughly chop or crush the cumin seeds, sea salt, garlic clove and bit of black pepper. Add the sugar and lemon juice and mix, then add the olive oil and stir well. Add salt and pepper to taste and transfer to a large bowl.
