280g Porridge Oats
80g Mixed Seeds
40g Flax Seed
120g Mixed Nuts (40g each type)
1 tsp mixed spice
1 tsp cinammon
1 tsp Vanilla paste or 1 vanilla bean
3 egg whites, beaten to soft peaks
Method
First place all of the dry ingredients in a large mixing bowl.
Add the egg whites and vanilla paste to a small bowl and beat with a mixer to form soft peaks
Next with a spoon add the egg whites to the dry ingredients and mix until thoroughly coated
Spread the mixture out onto a lined baking sheet.
Place in a preheated oven at 160 degrees C (fan oven) and bake for 40 minutes or until golden.
Once cooled store in an airtight container.
Dried fruit, frozen fruit or chopped fruit can be added when serving for sweetness.
