Spudzanella Salad

A hearty salad that is great before or after a workout. Serves 4 Ingredients 750g new potatoes 500g cherry tomatoes 75g pitted black olives, roughly chopped 1 tbsp tarragon, roughly chopped 2-3 stems of celery 3-4 spring onions 4 tbsp olive oil 1 tbsp red wine vinegar salt and pepper Method Cut the potatoes in half and place in a large saucepan of cold water, add salt and bring tot the boil. Simmer for 12-15 minutes. Drain. Have the cherry tomatoes and place into a large bowl. Squeeze the tomatoes with your hands to release the juice and break up the flesh. Add the chopped olives, tarragon, celery, onion, oil, vinegar and some salt and pepper to the squashed tomatoes and mix well. Add the hot potatoes straight to the tomato mixutre, toss well and serve.
