Serves 1 of 4 This is a favourite in our house! Very easy, makes loads, hides vegetables, super creamy and very filling. Ingredients 4-6 sprays fry light oil 1 large onion, roughly chopped 2 medium carrots, chopped 1 Tbsp tomato puree 2 x 400g tins chopped tomatoes 1 x 400g tin cannellini or butter beans 400ml vegetable or mushroom stock Salt & pepper Method Heat the oil spray in a large saucepan and add the onion. Fry on a medium heat for 8 minutes until soft. Add teh garlic, carrots, tomato puree and a big pinch of salt and pepper. Cook for a futher minute. Tip in the tinned tomatoes, drained beans and the stock. Cover with a lid and bring to a simmer for 10 minutes, until the carrots are tender. Puree the soup until smooth in the pan using a hand held stick blender or in batches in a food processor. Season with salt and pepper to taste.
