140g Porridge Oats
2 large ripe bananas
2-3 large eggs
1 tsp Bicarbonate of Soda
1 tsp Vanilla paste or
1 vanilla bean
150ml milk or milk alternative
Method
First place the eggs, vanilla paste, milk and bananas into a blender.
Add the porridge oats and bicarbonate of soda (and the protein powder if using)
Blend until it looks like a smooth batter.
Heat a lightly greased frying pan and pour in the desired amount of pancake mix.
Once bubbles appear you are ready to flip it to the other side.
When cooled store in an airtight container for about a week or freeze.
Serve with sugar free syrup, fruit or yogurt or for a savoury version a slice of ham and 30g of low fat cheddar.
