Ingredients 8 eggs a pinch of salt & pepper 3 carrots or courgettes roughly grated or a mix of both chopped vegetables (pepper, peas, broccoli, spring onion, chives, garlic 70g grated hard cheese Method preheat the oven to fan 190c/gas mark 6. Spray a muffin tray with fry light or use paper cases Beat the eggs in a large bowl and season. Add all of the vegtables to an approximate ratio of 50/50 eggs to veg Bake in the oven for 12 minute. Crumble the cheese on top and put back in the oven for 1 minute Remove from the oven and leave to cook. Store in the fridge in an airtight container for 1 week.
