Crab & Tomato Salad - Servings: 4 Main Ingredients 200g bag of rocket or mixed leaves 4 x peppers, thinly sliced 1 x large shallot or small red onion, thinly sliced 1 x jalapeno pepper, seeds removed and thinly sliced (optional) 900g tomatoes, thinly sliced (a variety of sizes and colours looks great!) 350g lump crabmeat 2 tablespoons of mayonnaise grated zest of half a lime 1 tablespoon of lime juice 1 1/2 tablespoons of olive oil pinch of salt & pepper a handful of basil leaves (fresh or frozen) Directions Spread the leaves, peppers, shallot and jalapeno over a large platter. Combine the manonnaise, lime zest & lime juice in a bowl and mix well. Add the crabmeat and mix gently. Arrange the tomatoes on the platter, over the leaves, drizzle with oil and season with salt & pepper. Mound the crab mixture over the tomatoes and sprinkle with basil leaves
