Makes 12 Muffins Serving: 1 Muffin Ingredients 3 tbsp runny honey 2 medium eating apples, peeled & diced 1 tsp Chines five-spice powder 1 tsp ground mixed spice 2 large free-range eggs, beaten 3 tbsp toasted sesame oil 200ml semi-skimmed milk 2 small bananas, peeled and mashed 300g self-raising flour 2-3 tsp granulated sweetner (Nkd Living Erythritol with Stevia is the best) 1 tsp bicarbonate of soda 40g raisins 1 tbsp rolled oats 1 tbsp light brown sugar Method Preheat the oven to fan 180C/ gas 4. Line a 12 hole muffin tin tray with muffin cases. Put the honey into a small non-stick saucepan over a medium heat and warm for 2-3 minutes to caramalise gently. It should turn dark and golden brown. Add the spices and apples and stir gently for 3-4 minutes or until slightly softened. Remove from the heat & leave to cool. Combine the beaten eggs, sesame oil and milk in a bowl. Mix in the mashed bananas. Spoon the mixture into the muffin cases. Mix the oats and sugar together and sprinkle on top of the muffins. Bake the muffins on the middle shelf for 20 minutes. Leave to cool.
