Salt & Pepper Squid

Serves 2 Ingredients 1 tsp mixed ground pepper 1 tsp salt 1/2 tbsp olive oil 1/2 onion, thinly sliced 1 garlic clove, thinly sliced 30g panko breadcrumbs 1 red chilli, finely sliced 2 spring onions finely sliced. 350g squid rings or squid tube sliced 100ml rice wine vinegar 1 tbsp caster sugar 2 tsp fish sauce Method Heat a non-stick pan over a high heat, add the oil, onion and garlic. Cook for 5 minutes Add the breadcrumbs and chilli, stir fry until the crumbs turn brown. Remove from the heat, stir throught the spring onions and set aside in a bowl. Get the pan hot again, add the squid rings and stir quickly for 2 minutes. Sprinkle over the salt and pepper (according to taste, you may not need all of it.) Stir in the breadcrumb mix then remove from the heat. Mix the vinegar, sugar and fish sauce in a bowl and add some spring onion. Serve as a dipping sauce with the squid.
