Ingredients 450g lean turkey mince 185g brown rice, cooked 1 can (445g) Italian-seasoned diced tomatoes 4 capsicum peppers, seeds and tops removed 45g reduced fat cheddar cheese, grated Method Preheat the oven to 190ºC Fan. In a large frying pan, cook the turkey over a medium-high heat until browned. Add brown rice and tomatoes and heat until slightly thickened. Divide mixture evenly between the peppers and place in a square baking dish. Cover with foil and bake for 25 minutes. Remove foil, sprinkle cheese over the top and bake another 5 minutes or until cheese is melted. Serves: 4
