Serves 1 of 6 We love this soup as it is a vibrant colour, thick, creamy and satisfying. It is also good for adding in any other green vegetables going spare in your fridge and most children love it due to the sweetness from the peas. Ingredients 1 tsp olive oil 2 large onions, roughly chopped 3 garlic cloves, diced 3 celery sticks, roughly chopped a large pinch dried oregano 1.5kg broccoli, chopped (you can use frozen or ready chopped) 1.5 litres vegetable stock 500g frozen peas Juice of 1 lemon or 1tbsp lemon juice Method Heat the oil in a large saucepan and gently fry the onion for 10 minutes until soft. Add the garlic, celery and oregano, fry for 3-4 minutes. Add the broccoli, stock and season with salt and pepper. Bring to a simmer and cook gently for 10-15 minutes until the broccoli is just tender. Remove from the heat and add the peas and lemon juice. Blend the soup in batches adding a little more liquid if it's too thick. Check for seasoning and serve or store in the fridge for 1 week.
